Ingredients

2 Granny Smith apples

6 cups salad greens of your choice (blends are nice!)

200g creamy blue cheese, crumbled

½ cup chopped toasted pecans

½ cup pomegranate arils

½ cup Balls of Fire fireball apple relish

Fresh Italian parsley, to garnish
Honey Mustard Dressing

1 teaspoon mustard
-
1 teaspoon honey
-
2 tablespoons apple cider vinegar
-
¼ cup olive oil

Pinch of Man Grind
Directions
- For the honey mustard dressing, pop all the dressing ingredients into a jar and shake well.
Slice the apples thinly and toss in a slosh of the dressing.
This doesn’t require many instructions really, add the dressing to the greens, then when ready to serve, layer the dressed greens with the crumbled blue cheese, pecans, pomegranate and apple — leaving some bits aside to garnish the top.
Dot the Balls of Fire throughout, adding a few small dollops over the top.
Garnish with last bits of blue cheese, pecans, apples and pomegranate — add some torn fresh Italian parsley and serve!
Recipe Note
Sub the blue cheese with goat’s cheese if you’re fussy.
