A fun twist on the classic, this Black Forest Log rolls up light chocolate sponge with whipped cream and juicy cherries, then gets dressed in more cream, a drizzle of chocolate and a scattering of cherries with a Cherry Bomb on top! All the flavours you love about Black Forest cake, just in a show-stopping log that is perfect for sharing.
Ingredients

Chocolate sponge sheet
Cherry Filling
- ¼ cup cherry juice (from the jar)
- ¼ cup water
- 1 teaspoon sugar
- 1 teaspoon custard powder
- ½ teaspoon Bakers Blend
- ½ jar Morello cherries
Cream Filling
- 1 teaspoon gelatine
- 2 tablespoons hot water
- 3 cups cream

1 tablespoon cherry juice (from the jar)
To assemble

300g Whittakers 50% chocolate (Don't use compound chocolate)
- Cherry Bomb, to sprinkle
Directions
- For the cherry filling, whisk the custard powder into the cherry juice, water, and sugar in a saucepan until smooth. Bring to the boil over medium heat, stirring constantly, until thickened.
- Remove from the heat, stir in the Bakers Blend and chopped cherries, and allow to cool completely.
- For the cream filling, dissolve the gelatine in the hot water and cool slightly before adding it to the cream. Whip until firm peaks form, then stir through a little cherry juice for flavour and colour.
Place the chocolate sponge sheet on a piece of baking paper. Spread evenly with cream, leaving a 3cm border along one long edge. Top with cherry filling, then sprinkle with Cherry Bomb.
- Use the baking paper to tightly roll into a log, seam side down.
- Melt the dark chocolate in a heatproof bowl set over a pot of gently simmering water, stirring until smooth. Pour the melted chocolate evenly over the log and allow it to set slightly.
Decorate with extra Cherry Bomb, more cherries if desired, and a generous grating of dark chocolate.
