If you’ve been wondering what else you can do with your Brûlée Toupee besides whipping up a classic crème brûlée, here’s a fresh summer alternative that’s just as delicious but way more refreshing. Our Lemon Soda is light, zesty and perfect for hot days. You can keep it simple and non-alcoholic with soda water, or turn it into a cheeky little cocktail by splashing in a shot of vodka or gin.
Ingredients
Non-alcoholic
- 1 sachet of Brûlée Toupee
- 1 cup cold water
- 4 lemons, cut into quarters
- Ice cubes
- 3 cups chilled soda water
Alcoholic
- 1 sachet of Brûlée Toupee
- 1 cup cold water
- 4 lemons, cut into quarters
- Ice cubes

4 shots (about 120ml) vodka or gin
- 3 cups chilled soda water
Directions
Non-alcoholic
- Put the Brûlée Toupee into a small jug and top with 1 cup of cold water. Stir until the sugar dissolves to make a syrup.
- Fill 4 glasses with ice, then squeeze in the juice from a few lemon quarters and drop the wedges in for extra zing.
- Pour the sugar syrup evenly over the ice and top each glass with chilled soda water (about ¾ cup per glass). Give it a gentle stir.
Alcoholic
- Put the Brûlée Toupee into a small jug and top with 1 cup of cold water. Stir until the sugar dissolves to make a syrup.
