Roasted Pumpkin, Pomegranate & Feta Salad

A vibrant, flavour-packed salad that brings colour and freshness to any table. The crunch from the seeds pairs beautifully with the creamy roasted pumpkin, and the burst of pomegranate adds a festive touch that's always a hit at Christmas.
Ingredients

1.5kg pumpkin, peeled and cut into chunks
- 3 tablespoons olive oil

2 teaspoons Man Grind Flakes
- 1 teaspoon Sgt. Pepper

150g baby spinach or rocket leaves
- 1 large pomegranate, seeded
- 1 small red onion, thinly sliced
- 200g feta cheese, crumbled

100g mixed toasted seeds (pumpkin seeds, sunflower seeds, pine nuts)

Fresh parsley or mint leaves, roughly chopped
Mustard Dressing
- 3 tablespoons extra virgin olive oil
- 1 tablespoon white balsamic
- vinegar or lemon juice
- 1 tablespoon Insane in the Grain
- 1 teaspoon honey
- 1 teaspoon Secret Weapon
- Sgt. Pepper, to taste
Directions
- Preheat your oven to 200°C fan bake. Place the pumpkin chunks on a large baking tray, drizzle with olive oil, and season with Man Grind Flakes and Sgt. Pepper.
Toss to coat evenly, then spread out in a single layer. Roast for 25–30 minutes, or until golden and tender. Set aside to cool slightly.
While the pumpkin is roasting, make the dressing. In a small jar, combine the extra virgin olive oil, white balsamic vinegar or lemon juice, Insane in the Grain, honey, Secret Weapon seasoning, and a pinch of Sgt. Pepper. Screw on the lid and give it a good shake until the dressing is well combined and slightly thickened.
- To assemble the salad, arrange the baby spinach or rocket on a large serving platter. Scatter over half the roasted pumpkin, followed by half the pomegranate seeds, red onion slices, crumbled feta, and toasted seeds. Repeat with the remaining ingredients to create layers of flavour and texture throughout.
- Drizzle some Mustard Dressing evenly over the top, then finish with a generous handful of fresh parsley or mint.
Serve immediately and enjoy the vibrant mix of sweet, salty, crunchy, and creamy in every bite. Perfect for a festive table or any summer gathering.
