This Pepper & Me twist on a classic favourite combines the light and crisp texture of meringue with the luscious sweetness of berry compote or zesty lemon curd. Whipped cream adds a dreamy lightness, while fresh strawberries and kiwifruit (if you desire) provide a burst of freshness.


Alternative

Elton Mess also works really well sprinkled over Pavlova if you prefer the whole pav option.

Eton Mess with Elton Mess

Ingredients

  • 12 mini meringues (use a whole pav if you prefer!)
  • 1 cup berry compote or sauce
  • 1 cup lemon curd 
  • 500ml cream whipped lightly
  • Fresh strawberries and/or kiwifruit
  • Elton mess sprinkle ½ sache
  • 12 mini jars to serve (Old Pepper and Me 200ml jars work great)

Easy Lemon Curd

  • 1 cup white sugar
  • 4 lemons (for zest)
  • 1 cup fresh lemon juice 
  • 3 whole eggs
  • 2 egg yolks 
  • 125g melted butter 

Directions

    Instructions for Lemon Curd

    1. In a large microwave-safe bowl, whisk together the sugar and whole eggs and egg yolks.

    2. Add the lemon juice, and lemon zest to the eggs and sugar and whisk well.

    3. Pour in the slightly cooled melted butter and whisk to combine.

    4. Next, place the bowl in the microwave and cook on high for 1 minute, then stir. Repeat in 1-minute intervals until the curd has thickened and coats the back of a spoon.

    5. Depending on your microwave, this will take 4 to 6 minutes. The curd will thicken further as it cools in the fridge.

    To assemble

    1. Crush the meringues into small chunks, then layer each ingredient into the jars.
