Take your taco night to the next level with these epic Caesar Tacos! Juicy grilled chicken, crisp lettuce, parmesan, and a zesty Caesar dressing wrapped in a soft taco shell – it's the perfect mashup of two classic favourites.
Ingredients
8 small soft tortillas
500g chicken breast
100g parmesan
1 avocado sliced
1 cos lettuce shredded
4 rashers streaky bacon
1 tbsp Spit Roast Salt Flakes
Basic Bitch Caesar Dressing
Directions
Butterfly chicken breast and pound until 1.5cm thick; sprinkle both sides with Spit Roast Salt Flakes.
Heat a non-stick pan over medium heat; add oil and chicken.
Cook 4 minutes each side; set aside.
Cook bacon until crisp; set aside.
Finely grate Parmesan.
Whisk dressing ingredients in a bowl.
To make taco shells: heat a pan, add Parmesan, quickly place tortilla on top.
After 15 seconds, cheese should melt; carefully flip tortilla.
Cook for 10-20 seconds; shape into taco shell and stand up. Repeat with all tortillas.
Build tacos: spread dressing, add lettuce, bacon, avocado slices, and chicken. Finish with more dressing.
Serve immediately; great with crispy roast potatoes.
