This Greek Cheese Pie is a crispy, golden spiral of flaky filo pastry filled with a dreamy mix of feta and ricotta. Baked until bubbling and bronzed, it’s a showstopper that’s as fun to make as it is to eat.
Preheat your oven to 200°C and line a large round baking dish or tray with baking paper.
In a bowl, combine the cottage cheese, crumbled feta, Greek yoghurt, parmesan, Greece Lightning, and Man Grind. Mix well until the filling is smooth and creamy.
Take one sheet of filo and lay it flat. Brush lightly with melted butter, then lay another sheet on top and butter again. Spoon a line of the cheese filling along the long edge of the filo, then roll it up into a log. Gently twist the log into a loose spiral and place it in the centre of your prepared tray.
Repeat the process with the remaining filo and filling, wrapping each new roll around the spiral to continue the coil shape. You’ll end up with one large snail-like spiral.
Once the spiral is complete, brush the entire pie generously with butter and sprinkle with Tik Tok Sprinkle for that crunchy, golden finish.
Bake for about 30 minutes, or until the pastry is golden brown and crisp. Let cool slightly before slicing into wedges.
This pie is delicious served warm or at room temperature alongside a traditional Greek salad.
