Tender Moroccan-spiced chicken served with fluffy couscous and vibrant vegetables. A fresh, flavour-packed dinner that's as easy as it is satisfying.

Moroccan Chicken Couscous

Ingredients

  • 1 cup Greek yoghurt

  • 2 teaspoons G-Banger

  • 1 bag of Just Cous

  • 1 tablespoon oil

  • 2 cups boiling water

  • 2 tomatoes

  • 200g feta

  • 1 large rotisserie chicken

  • 100g baby spinach

  • A dash of lemon juice

  • Sprinkle of Man Grind Flakes, to taste

  • Black pepper, to taste

Directions

  1. To make the garlic yoghurt, place the yoghurt and G-Banger in a small bowl and mix well. Leave to rest for at least 1 hour before serving.

  2. Place the full bag of Just Cous in a large bowl and drizzle over the oil. Pour over the boiling water, give it a quick stir, then cover and leave to sit for 5 minutes.

  3. Meanwhile, dice the tomatoes and feta. Pull the chicken off the bones and roughly chop or shred.

  4. Remove the cover from the couscous and fluff with a fork. Add the spinach, feta, tomatoes, and chicken, then toss everything together until combined.

  5. Season with a dash of lemon juice, Man Grind Flakes, and cracked black pepper to taste.

  6. Serve with a generous drizzle of the punchy garlic yoghurt.
