Orange Spiced Chicken

Ingredients

  • 1 cos lettuce washed and chopped
  • 1 handful baby spinach
  • 2 tomatoes diced
  • 1 avocado, diced with a squeeze of lemon
  • ½ cup cucumber, diced
  • ½ red capsicum, sliced
  • 2 spring onions, thinly sliced

  • ¼ cup plain yoghurt

  • 10 mint leaves finely sliced
  • Man Grind Flakes, to season

  • 3 chicken thighs boneless and skinless

  • ½ cup of Wham Bam! 

Directions

  1. Start by slicing the chicken thighs (or breast) into chunky strips.
  2. Heat a pan over medium high heat and sear the chicken until it’s golden on the outside.
  3. Once it’s nicely coloured, pour over a generous splash of Wham Bam!
  4. Turn the heat down and let the chicken gently simmer in the sauce for 8 to 10 minutes, until cooked through, glossy and sticky.
  5. While the chicken simmers, toss together your salad ingredients in a large bowl. Add a good squeeze of lemon and season well with Man Grind Flakes. Divide the salad between two plates.
  6. Stir together the minted yoghurt until smooth and creamy.
  7. When the chicken is tender and coated in that sweet, citrus spiced glaze, pile it over the fresh salad. Drizzle with the minted yoghurt, add a few extra mint leaves if you like, and serve while the chicken is warm and sticky.
