Fresh and vibrant, these Pork & Prawn Rice Paper Rolls are packed with juicy pork, succulent prawns, and crisp veggies. Wrapped in delicate rice paper, they’re a light, tasty treat perfect for dipping in our Miso Horny sauce.
Ingredients
200g quality pork mince
200g prawns halved or
chopped into peices
1 avocado sliced
1 carrot
¼ iceberg lettuce
12-15 rice papers
1 red capsicum
100g Miso Horny Mayo
25g chopped mint & coriander

Directions
Heat a splash of oil in a pan and cook the pork mince, breaking it into small chunks. When the pork is nearly done, add the prawn pieces and cook until they’re through. Remove from heat and let cool. Stir in Miso Horny mayo.
Julienne the carrot and capsicum, finely shred the lettuce, slice the avocado, and shred the mint and coriander.
Wet a tea towel and lay it on the bench. Fill a shallow bowl with lukewarm water. Dip each piece of rice paper into the water for about 10 seconds until it is flexible but firm. Lay on the tea towel.
Arrange the fillings along the bottom of the rice paper, leaving 2cm on each side for folding.
Fold the bottom over the filling, then fold in the sides, and roll tightly to avoid air bubbles.
Slice in half when ready to serve. For later, wrap in the damp tea towel and refrigerate for up to 8 hours, making sure the towel isn’t too wet.
Serve with a dipping sauce made from equal parts Miso Horny Mayo and soy sauce. If you like a bit of spice, add some Hot Mess as well.
