Light, fluffy waffle cakes with a fresh feijoa twist! Perfect for a sweet treat or a fun brunch.
Ingredients
375ml milk
80g melted butter
2 eggs
Waffling On Waffle/Pancake Mix
Feijoa compote
250g feijoa
1 tsp Bakers Blend
¼ cup of sugar
Directions
In a bowl, mix the melted butter, milk, and eggs together until well combined.
Add the Waffling On dry mix and stir until just combined—be careful not to over mix, as this can affect the texture.
Cook the mixture in a waffle iron according to your waffle iron’s instructions, or for hotcakes, cook them on a preheated, lightly greased pan over medium heat.
For the Feijoa compote, peel the feijoas, taking care to remove as little skin as possible, and cut them into 1cm cubes.
Stir through the Baker’s Blend and sugar until well combined.
Cook over low to medium heat, stirring occasionally, until the feijoas break down and the syrup thickens to a syrupy consistency.
