Waffle Cakes

Light, fluffy waffle cakes with a fresh feijoa twist! Perfect for a sweet treat or a fun brunch.

Ingredients
- 375ml milk
- 80g melted butter
- 2 eggs
- Waffling On Waffle/Pancake Mix
Feijoa compote
- 250g feijoa
- 1 tsp Bakers Blend
- ¼ cup of sugar
Directions
- In a bowl, mix the melted butter, milk, and eggs together until well combined.
- Add the Waffling On dry mix and stir until just combined—be careful not to over mix, as this can affect the texture.
- Cook the mixture in a waffle iron according to your waffle iron’s instructions, or for hotcakes, cook them on a preheated, lightly greased pan over medium heat.
- For the Feijoa compote, peel the feijoas, taking care to remove as little skin as possible, and cut them into 1cm cubes.
- Stir through the Baker’s Blend and sugar until well combined.
- Cook over low to medium heat, stirring occasionally, until the feijoas break down and the syrup thickens to a syrupy consistency.
