Baked BBQ Beef Meatballs

Versatile family friendly BBQ meatballs with many different serving options.

Ingredients

Meatballs

500g beef mince
1/2 cup panko breadcrumbs (see notes)
1 egg
1 tbsp Man Rub
1/4 cup Get Lit
Man Grind

Sauce

1 can chopped tomatoes
1/4 cup Get Lit
1 tsp Man Rub
1 tbsp brown sugar (optional)
3/4 cup beef stock (or water)
1 cup grated mozzarella or any cheese

Directions

Preheat oven to 180C Fan Bake.
In a large bowl combine all the meatball ingredients and mix thoroughly.
Roll into meatballs and place in a baking dish.
Bake for 10 minutes.
Combine Get Lit, Man Rub, canned tomatoes, brown sugar and beef stock.
Pour over meatballs.
Cover with cheese (for this recipe i used up some mozzarella slices but any cheese will work). Place in the oven and bake for 15 minutes, if the cheese isn't brown pop the grill on for a few minutes to brown.
Serve with either mash, pasta, cauliflower rice or zoodles.

Recipe Note

To make this recipe gluten free use gluten free breadcrumbs or ground almonds.

For a lower carb adaptation use sugar free maple syrup instead of brown sugar and use ground almonds.
