Crispy, golden chicken bites stuffed with garlicky herb butter. Crunchy on the outside, juicy in the middle and perfect for dipping into your favourite mayo or aioli.

Ingredients

    Garlic Butter

    • 250g butter, softened
    • 4 garlic cloves, minced
    • 1 tablespoon fresh herbs, finely chopped
    • 1 tablespoon G-Banger

    Chicken Mixture

    • 500g chicken mince
    • 1 egg
    • 1 tablespoon Secret Weapon
    • ½–1 cup panko breadcrumbs

    Crumb

    • 1 cup flour
    • 2 eggs
    • 1 Tbsp milk
    • 2 cups panko breadcrumbs or Lemon & Herb Crumb
    • Cooking oil spray

    Directions

    1. To make the garlic butter, combine the softened butter, garlic, fresh herbs and G-Banger. Spoon onto a sheet of cling film, roll into a log and freeze for 1 hour or until firm. Cut into 1cm cubes.
    2. In a large bowl, combine the chicken mince, egg, Secret Weapon and ½ cup panko breadcrumbs. Mix well, adding more breadcrumbs if needed to help the mixture bind.
    3. Place the flour, beaten eggs mixed with milk, and breadcrumbs into three separate bowls.
    4. Take approximately 1 tablespoon of chicken mixture and flatten it in your palm. Place a cube of garlic butter in the centre, then shape the mince around it to form a ball, ensuring the butter is completely enclosed.
    5. Coat each ball in flour, dip into the egg mixture, then roll in the breadcrumbs until evenly coated.
    6. Preheat your air fryer to 180°C. Place the bites in a single layer, spray lightly with cooking oil and air fry for approximately 15 minutes, turning halfway through, until golden, crispy and cooked through.
    7. Serve hot with your favourite mayo or aioli.
