Ingredients

500g boneless, skinless chicken thighs

6 cloves garlic

½ cup flour
-
1 teaspoon Man Grind Flakes

Oil for cooking

50g butter
-
½ cup sliced sun-dried tomatoes

2 cups chicken stock
-
1 ½ cups cream
-
2 teaspoons Marry Me
-
Pepper on Me, to season

100g grated parmesan

Fresh basil, to garnish
Directions
Lightly pound the chicken thighs to an even thickness and cut in half. Slice the garlic and set aside.
Pop the flour on a plate, season with the Man Grind Flakes and coat the chicken in the seasoned flour.
Drizzle some oil into a large/deep pan or shallow casserole dish over a medium-high heat and sear the chicken for about 2 minutes on each side to brown. Set aside on a plate.
Wipe out the pan then add the butter and melt over a medium-high heat before adding all the garlic. Sauté for a minute or so.
Next add the sliced sun-dried tomatoes and sauté for another minute before pouring in the chicken stock and simmering for a few minutes to reduce slightly.
Add the cream and return chicken to the pan, season with the Marry Me and simmer for 5 minutes over a medium heat.
Add Pepper on Me to taste and stir through the parmesan.
Garnish with fresh basil and more parmesan.
