A yum cha favourite, these are a great starter along side some dumplings or steamed buns. So easy to make at home.

Prawn Toast

Ingredients

  • 150g raw prawn meat (peeled and deveined)

  • 1 spring onion

  • 1 tbsp Wok sauce

  • 1 egg white

  • 1/2 tsp sugar

  • 4 slices white toast bread

  • 4 tsp Tik Tok

Directions

  1. Add prawn meat, egg white, sugar, wok sauce and 3/4s of a spring onion to the bowl of a food processor. Keep the green top of the spring onion for garnish

  2. Pulse for about 30 seconds until a paste forms

  3. Pop the prawn mixture into a bowl and chill for 10minutes in the fridge

  4. Lay out your bread

  5. Place 1/4 of the mixture on each slice of bread

  6. Spread the prawn mixture right to the edge in an even layer  

  7. Sprinkle about a teaspoon of Tik Tok

  8. Add enough oil to a fry pan to just coat the bottom of the pan. Heat over a medium high heat. Place the toasts into the pan bread side down first. Fry for 30 seconds to one minute before flipping carefully and cooking for 1 minutes 

  9. These cook very quickly and you may not need the full minute, keep a check on them to not burn the Tik Tok. Drain the toasts on paper towels to remove any excess oil 

  10. Cut into quarters 

  11. Serve with aioli and sesh oil mixed together. Garnish with the remaining chopped spring onion
