Cherie Metcalfe
A fresh, crunchy chicken salad loaded with shredded greens, cucumber, fresh herbs and plenty of our Sesame Street dressing. Packed with flavour and tossed in a deliciously savoury sesame dressing, it's perfect for a quick lunch or easy dinner. Best made fresh and eaten straight away!

Ingredients
- Cooked chicken, shredded
- Iceberg lettuce, finely shredded
- Green cabbage, finely shredded
- Radishes, thinly sliced
- Cucumber, thinly sliced
- Red onion, thinly sliced
- Spring onions, thinly sliced
- Fresh coriander and mint, roughly chopped
Sesame Dressing
- ⅓ cup Sesame Street
- 1 tablespoon sesame seeds
- Fresh chilli, finely chopped (optional)
Directions
- Start by shredding your cooked chicken and finely slicing the lettuce, cabbage, radishes, cucumber, red onion and spring onions. Roughly chop the coriander and mint, then add everything to a large serving bowl along with the shredded chicken.
- There's no need to be too precise with the quantities here. Use as much or as little of each ingredient as you like, depending on how many people you're feeding. Just aim for a good mix of crunchy greens, fresh herbs and plenty of chicken.
- To make the dressing, combine the Sesame Street Dressing and sesame seeds in a small bowl or jar. Give everything a good stir or shake to combine. For an extra kick, add some finely chopped fresh chilli.
- Pour the dressing over the salad and toss everything together until the chicken and vegetables are evenly coated. Make sure you get right to the bottom of the bowl so none of that delicious dressing goes to waste.
- Serve immediately while everything is fresh and crunchy!
