Viral Spiral Cucumber Salad

Crunchy spiral cucumbers, creamy avocado and edamame drenched in Sesame Street dressing and absolutely loaded with Crispy Business. Fresh, punchy, sesame-y and packed with crunch. Almost too pretty to eat. Almost.

Ingredients
- 4 small Lebanese cucumbers
- 1 cup shelled edamame, cooked and cooled
- 2 spring onions, thinly sliced
- ½ cup Sesame Street
- 1 teaspoon Man Grind Flakes
- 1 large avocado, diced
- 2 tablespoons Crispy Business
- 2 tablespoons toasted sesame seeds
- ½ cup fresh coriander leaves
- 1 lime, cut into wedges
Directions
Place a cucumber between two chopsticks to stop your knife from cutting all the way through. Slice diagonally across the cucumber at roughly 3mm intervals.
Flip the cucumber over and make cuts straight across at the same intervals. Gently stretch the cucumber out to reveal the accordion spiral. Repeat with the remaining cucumbers.
Cut each spiral cucumber into two or three shorter lengths and arrange on a serving platter.
Scatter over the edamame and spring onions.
Drizzle generously with Sesame Street, making sure it gets right down into all those cucumber spirals, then sprinkle over the Man Grind Flakes.
Add the avocado and spoon Crispy Business over the top, getting plenty of the crispy bits and chilli oil across everything.
Finish with the toasted sesame seeds and coriander, with lime wedges on the side for squeezing.
Serve immediately while everything is fresh and crunchy.
