Cowboy Queso Cobb Loaf with Chipotle Ranch

A classic favourite Cobb loaf revamped. Filled with a smilky smooth queso, this one’s a guaranteed hit.

Ingredients

200g streaky bacon

250g cream cheese
-
1 cup evaporated milk
-
½ cup sour cream
-
2 tbsp Chipotle Ranch

2 cups grated cheddar cheese
-
¼ cup chopped jalapenos (optional)

1 Cobb loaf
-
3 spring onions, chopped
Directions
Preheat the oven to 200°C.
Dice the bacon and add it to a medium saucepan. Cook till crispy.
Add cream cheese and evaporated milk. Turn down the heat and whisk gently until it comes together into a sauce.
Add cheese, sour cream, spring onion, Chipotle Ranch, and jalapenos if using, and mix to combine.
Hollow out a Cobb loaf and add it to an oven tray. Tear up the bread insides and pop them on the tray too.
Pour queso into the Cobb loaf and sprinkle more cheese on top.
Bake for 12 minutes at 200°C.
To serve
Serve with the toasted, torn-up bread, celery, carrot sticks, or whatever you so desire.
