Crave something crunchy and flavourful? Our Poke Me Katsu Chicken delivers with crispy, golden-brown chicken coated in a savoury panko crust, perfectly seasoned and served with a zesty dipping sauce. It’s a satisfying, mouthwatering meal that hits all the right notes.
Ingredients
2 large chicken breasts
½ cup flour
2 eggs
1 ½ cups panko crumb
3 tbsp Poké Me
Kewpie Mayo
Slaw
½ green cabbage
2 carrots
1 chilli (optional)
2 spring onions
Dressing for slaw
1/3 cup mayo
2 tbsp lime juice
1 tbsp Hot Nuts
(the chunky bits)
Directions
To make the slaw, finely shred the cabbage and julienne or grate the carrots. Finely chop the chilli and spring onions.
For the dressing, whisk together all the ingredients and pour over the slaw. Toss well to coat.
Set up three bowls for a crumbing station for the chicken: combine the Poké Me and panko in one bowl, the flour in another, and the whisked eggs in the third bowl.
To prepare the chicken breasts, cut them in half horizontally to create four thin slices. Place the slices between two pieces of baking paper and use a rolling pin to pound them out a bit thinner until they are about 1cm thick all over.
Heat a frying pan with about an inch of oil, or use a deep fryer if you prefer.
First, coat the chicken in the flour, then dip it in the egg, and finally coat it with the Poké Me panko crumb mix.
Fry each piece for 2.5 minutes on each side, or until golden and cooked through.
Serve with slaw, an extra drizzle of Hot Nuts, and some Kewpie mayo.
