Beetroot & Feta Filo Cigars

These crispy, golden bites are the perfect fusion of tangy Greek feta and our Can't Beet a Root relish, all wrapped up in flaky filo pastry. With their delightful crunch and burst of flavour, these cigars are ideal for summer gatherings and a must-have at barbecues, pool parties, and picnics. 
This recipe should make 12 cigars.
 
                      Ingredients
- 
            
½ cup Can’t Beet a Root - Beetroot Relish 
- 
400g greek feta 
- 12 filo sheets
- Melted butter
- Lemon zest and finely chopped rosemary
- Sesame seeds
- 
Sweet Sesh Hot Honey to drizzle 
Directions
- Place a filo sheet on a cutting board and lightly brush it with melted butter. Fold the filo into thirds lengthways to create a long strip.
- Place a piece of feta at one end of the filo strip. Add a teaspoon of beetroot relish and sprinkle with a pinch of lemon zest and rosemary. 
- Wrap the filo around the feta, then fold the short edges around the feta block to enclose it, brushing the edges with more butter if needed to seal the seam. 
- Repeat with the remaining filo, brushing each sheet with butter before folding and filling with the beetroot relish and feta. 
- Brush the tops of the filo with a little more butter and sprinkle with sesame seeds and extra rosemary.
- Air fry the feta bites for 13 minutes at 200 degrees, or until golden and crispy.
- Arrange on a platter, drizzle with hot honey, and serve.
