Caesar Smash Tacos

These Caesar smash tacos were such an easy meal to whip up and, despite the ease, they were SO tasty. The perfect throw together for a busy summer dinner.
Ingredients

500g chicken mince

150g streaky bacon, finely sliced

2 tablespoon Fry-Yay (if you don't have Fry Yay you could substitute for 2 teaspoon Sanders Seasoning or Man Grind Flakes)

1 cos lettuce, cut into thick strips

½ red onion, finely sliced

Parmesan cheese

Caesar dressing (any brand will work)

10 taco sized tortilla's (I use Farrah's)
Directions
Mix the mince and Fry Yay seasoning together in a bowl and set aside.
Preheat oven to 50℃. Line a baking sheet with a wire rack and place in the oven. Heat a fry pan over medium heat. I used two fry pans so I could could two at a time and bang them out faster.
Take 50g of the seasoned mince and spread thinly onto the tortilla. I find a small spatula works best for this.
Place the tortilla, chicken side down in the fry pan and press down with a fish slice. Cook for 2-3 minutes until chicken side is golden and the chicken in cooked through. Flip over and cook the tortilla side for 30 seconds until golden and crunchy.
Remove from the heat and place on the wire rack in the oven to keep warm. Repeat until all chicken tortilla's are cooked.
Now it's time to assemble! Add a small handful of lettuce, some red onion, bacon and a sprinkle of parmesan cheese. Drizzle with the Caesar dressing and enjoy!
I served all the toppings up on a platter on the table alongside a plateful of the chicken tortilla's and the bottle of dressing and everyone assembled their own.
