To prepare the pork start by velveting the meat, thinly slice the pork into strips and add to a bowl.
Sprinkle over the baking soda and stir vigorously to coat the pork. Cover with gladwrap and leave to sit for 15-20 minutes
The next step is crucial, using a sieve and cold running water, rinse the baking soda off the sliced pork. The baking soda will have tenderised the pork to give that takeaway shop texture. Rinse it for a good minute to remove all the baking soda taste
Pat dry on some paper towelsHeat a fry pan or wok over the highest heat, add a drizzle of oil and add the sliced pork.
Fry for a couple of minutes until it is starting to brown
Add the sliced onion and roughly chopped broccolini. Stir fry for another couple of minutes.
While the pork is frying combine the BBQ Sauce, chunky spoonfuls of sesh oil, soy sauce, brown sugar and water.
Pour the sauce into the pork and cook off from another minute or two.
Mix the cornflour with a splash of water to make a slurry, add this to the pan and mix through to thicken the sauce.
