Remove sausage from casing and break into small pieces.
Add a drizzle of oil to a fry pan over a medium heat, add sausage and begin to brown breaking up with a wooden spoon into small pieces.
Peel the potatoes and cut into 1cm cubes, add to the pan with the sausage and mix well. Add 1/2 cup of water and cover with a lid, this help the potatoes steam. Leave for about 5 minutes
Remove the lid and add Blow My Coals, sauté for another minute or two or until all the water is evaporated.
To prepare the buns carefully remove the center of each bun to make a bread bowl.
Add a teaspoon of relish to the bottom of each bun and a small sprinkle of cheese.
Next divide the sausage and potato mixture between each bun.
Whisk the eggs together in a small bowl with a pinch of Man Grind.
Pop the buns on a lined baking tray and slowly and carefully pour the egg mix into the buns, you can use a fork to kind of life the sausage mixture to allow the eggs to fill all the gaps.
Top the buns with the remaining cheese.
Bake in the oven for about 15 minutes or until the eggs are set in the center. If they need longer you can cover with tin foil to stop the bins getting too brown.

You could also add diced bacon and sliced mushrooms in with the sausages and potatoes.
