American diner-style breakfast potatoes are a great alternative to hash browns. Crispy and moreish, they are the perfect accompaniment to poached eggs.

Ingredients

6 washed agria potatoes
-
1.5 tbsp Blow My Coals
-
25g butter
-
Olive oil
-
Man Grind
To serve
-
Poached eggs
-
Bacon
-
Avocado
Directions
Dice the potatoes into 1cm ish cubes. You want them fairly small. Add the butter and a drizzle of oil to a large fry pan and melt over a medium high heat then add the potatoes
Cook for about 6-8 minutes tossing regularly so they brown in all sides. Check a cube to see if they are cooked through. Reduce the heat if they are browning too quickly
Add Blow my Coals and toss well to coat, cook off for another 1-2 minutes.
Season with a little man grind if you feel it needs it.
Serve as you would hash browns or as part of a breakfast bowl with eggs, bacon, avocado etc.
