Cranberry and Orange Orzo Salad

Such a fun salad, perfect for Christmas or sharing at a BBQ.
Ingredients
- 400Ā gm orzoĀ Rizzoni
- 2Ā orangesĀ Peeled and segments
- ā Ā cupĀ dried cranberries
- ā Ā cupĀ toasted pecans
- 1Ā red onion finely diced
- Handful of rocketĀ optional, although it brings a nice color and crunch to the salad
- 50Ā gmĀ Feta
Dressing: (Add all ingredients into a jar and shake well)
- 1/2Ā cupĀ confit garlic oil
- 3Ā TBL white wine vinegar
- 1Ā tspĀ Moārocckin paste
- ½ tsp Man Grind ground
Directions
- Cook orzo as per instructions on the packet, drain and rinse with cold water.Dress well with the dressing, and season to taste with extra Man Grind if desired.
- Add all remaining ingredients, saving some pecans and cranberries to garnish the top of the salad. Pile onto a platter or salad bowl and garnish.
- Enjoy!
